3 Ingredient pancakes

This might be my favorite recipe ever! These pancakes are so incredibly easy to make, healthy and delicious. Definitely a staple in our house!

Only 3 ingredients are required, eggs, oats and bananas. I make them literally every weekend for me and my boyfriend (it’s no weekend without pancakes!!) and they are quite famous among our friends as well!

You can mix it up with different topping or spices. This recipe is with melted dark chocolate and pomegranate seeds. I hope you will love this recipe as much as I do!

Ingredients

For the pancakes:

1 banana (about 170g – medium size)

1 egg

½ cup oats (about 40g)

Splash of almond milk

Cinnamon (optional)

Double the amount for 2 people

 

Toppings:

Melted dark chocolate

Pomegranate seeds

Preparation

1.Grab a blender (I use a Nutribullet) or food processor and add the eggs, oats and banana. You can also mix everything by hand in a large mixing bowl.

Add your spices as well and blend until smooth. If your batter is a little too thick you can add a splash of almond milk. 

2.Place a frying pan over medium heat and add a tablespoon of olive or coconut oil. Once warm, add spoonfuls of the mixture to your pan, using you spoon to shape them into circles. I usually make 4 at the time in my pan.

3.Leave the pancake to cook on one side for about 2 minutes, until the bottom has cooked. Flip the pancakes over and cook on the other side for another 1-2 minutes.

4.Once cooked, place them on your plate.

5.Repeat the process until all your batter is finished.

6.Top with your favorite topping. For this recipe I melted some dark chocolate au-bain-marie, drizzled it over the pancakes and added some pomegranate seeds.
