Brownie Energy Bites

These brownie energy bites are my all-time favorite snack and are super simple to make!

You can make a big batch over the weekend and enjoy them throughout the week, this way you will always have a healthy snack at hand.

Add a scoop of protein powder to make it the perfect workout snack. They taste like brownies, so if you are a chocolate lover like me, definitely give them a try!

Ingredients

Makes about 16 pieces

2 cups of medjool dates, about 400g

1 cup of nuts (I used almonds ), about 200g

3 – 4 tbs of raw cacao

4 tbs of shredded coconut

Splash of water (if your dates are not soft enough)

Preparation

1.Place the nuts in a food processor and blend until nicely chopped. There can still be some larger chunks of nuts in there.

Now, if you have a really strong food processor you can leave the chopped nuts in there and add your dates and raw cacao. Mix everything until it is blended together.

2.If you don’t have a strong enough food processor, like me, you can transfer the nuts to a large mixing bowl.

3.Now add your dates to the food processor and blend until you have a smooth paste.

If your dates are a little bit dry or won’t mix well, you can add a splash of water so it blends better.

Transfer your dates to the same mixing bowl.

4.Add the raw cacao as well and mix everything together with a spoon or, like I love to do, kneed everything together with your hands.

5.Grab a plate for the shredded coconut.

6.Scoop out a small amount of the date cacao mix and roll into little balls.

7.Roll them through the shredded coconut and place in a container.

8.Put them in the fridge for about an hour and then they are ready to be eaten!

9.You can store them in an airtight container in de fridge for about a week of keep them in de freezer and grab them whenever you feel like a good snack!
